If you or someone you care for is Diabetic, chances are you are having a hard time coming up with sweet gift ideas for the upcoming Valentine's Day holiday, a holiday in which sugar laden treats are the norm. Well I am going to share with you this awesome sugar-free hard candy recipe which will allow you to create your own Valentine's Day candy! These little treats can be super personalized and nothing says I love you more than "I spent a ton of time making this for you", don't you agree?
For this recipe you will need a candy thermometer and candy or "sucker" molds - any shapes will do but hearts would be the best - you know, considering the holiday and all. You might be able to make these molds as well but I was not able to find any good online instructions. You will want these molds to be lubricated - cooking spray works fine.
Ingredients:
1 1/2 cup sugar-free syrup
1 cup Maltitol (a sugar alcohol)
1/2 teaspoon candy flavoring (oil)
Food coloring (red would likely work best)
Directions:
In a saucepan mix the 1 1/2 cup sugar-free syrup and the 1 cup Maltitol, bringing the mixutre to a boil until it reaches 300 degrees.
When the temperature comes to 300 - quickly remove the pan from the heat source and wait until it stops bubbling, then add the 1/2 teaspoon candy flavoring (oil) and the Food coloring (red would likely work best). Pour into molds and wait for the candy to coll completely (approximately 1 hour) before trying to remove them from the mold. Wrap the completed candy in individual foil or plastic and prepare to give them as gifts! As a note: Make sure the candy is stored in an airtight container after it has been wrapped.
