For me, the hardest part about diabetes is finding food to eat. I hate cooking and hate having to think too much about food –there are too many other things to worry about. So when it comes to meals, especially lunch, simple is better in my opinion. The following lunch has become my favorite and I eat it nearly every day. When you find something that works, it seems easier to stick with it than to experiment. Variety is nice, but only if you don’t have to think about it too much.
So without further ado, and perhaps with a little letdown that it’s not a 5-star meal, I present to you my favorite low carb lunch ever: summer sausage, cheddar cheese and Greek yogurt. I only recently discovered the yogurt, and my first thought was, “Where have you been all my life, Greek yogurt??” Compared to other yogurts, it is relatively low carb, but is much higher in protein and unbelievably delicious.
I prefer Hickory Farms summer sausage, but Johnsonville makes a decent sausage as well. Portion control is the most important part. I like to have four slices of summer sausage, four slices of cheese (a 2-pound brick slice cut in quarters) and between one-half and one cup of the yogurt.
The big thing about this meal is the high protein content. The meat and cheese have virtually no carbs, and at 27 grams for a full cup of Greek yogurt, it is well within most low carb diet requirements for a lunch.
