Talk to your husband's physician. Tell him about your concerns.
Ask to speak to the hospital nutritionist; there are free classes you can take about how to shop and how to cook.
You can do this. My mom was diagnosed with diabetes when I was a kid, and she's in her late 80s.
It's not that hard, really. You absolutely can do this--and it's going to be better for you, and for your children, too.

Your husband is young and he does not have to take a drastic change in his lifestyle. I have had Diabetes for 24 years. It can be mnanaged and you can keep complications out of the picture.  Monitor your glucose, eat small and healthy meals and get exercise and keep your weight down.  I would imagine that in ten or so years they will either have a cure, or be close, or have better ways to control it.
